I’ve made the traditional vanilla lamington and a chocolate lamington so for this years Australia Day I made a marbled lamington, the best of both worlds really.
Making up a vanilla butter cake and a chocolate cake (easy with store bought packet mixes) I used the bigger lamington tray (about 33x23cm) as it’s 2 cake mixes. Then followed the instructions for the icing mix from recipe above.
I must say that I should have checked my coconut stock as I was scraping the bottom of the barrel so to speak, they’re a lot easier to coat when you have lots of coconut but they still turned out delicious, I ate one just to make sure.
They will be our dessert for our Australia Day lunch on the 26th of January.
