Beetroot hummus

For this I used a jar of pickled beetroot that I think has a nice flavour, of course you can use your own cooked fresh beetroot but make sure it’s quite tender or it won’t blitz very well.

In a blender or bullet I then blitzed half a jar of pickled whole beetroots set aside then made my usual hummus  recipe.

I split the hummus mix into two containers mixing the beetroot into only one container.

Stored in the fridge as per usual. What a difference the beetroot made to the flavour and splitting the hummus in half gives you a bit of variety.
